Veggie Miso Soup
This is veggie miso soup is a quick and easy meal to throw together when you don’t have a ton of time.  The flavor is very mild and simple but you can spice it up with some creativity if you want to.  I enjoy the simplicity of this soup which appeals to my kids so they eat it up.

Instructions
  1. Chop veggies and steam with just enough water to cook all the way through and leaving no liquid in the pan.
  2. While veggies are steaming, cook rice noodles according to package directions. Should only take approximately 5 minutes once water is boiling (DO NOT DRAIN!)
  3. Once the noodles are cooked through add the miso paste to the starchy water with the noodles and stir until blended.
  4. Add the cooked veggies and other spices then adjust to your taste. Cook for a couple minutes to blend the flavors.
  5. Garnish with sesame seeds and ENJOY!
