Ingredients

cup
pre-cooked rice
left over brown or white rice
1 – 1/2
cups
coconut milk
adjust to thickness desired, full fat is creamiest but low fat works too
1/4
cup
maple syrup
healthier option: date paste or pureed banana
1
teaspoon
vanilla extract
1/2
teaspoon
cinnamon
additional on top to taste
pinch
of salt
raisins
Instructions
In a medium sauce pan mix together the coconut milk, maple syrup, vanilla, cinnamon & salt.
Mix the rice into the sauce and cook with a lid over low/medium heat until 70% of the milk is absorbed into the rice.
Remove from the heat, mix in the raisins and cover for 5 minutes.
Serve immediately with additional maple syrup, milk, or cinnamon. ENJOY!
