These Vegan Caramel Turtles – on the fly came about when I saw a picture of a Caramel Turtle on FB and had to have one. I looked in my cupboards and figured I could make them based on what I had on hand without a recipe, ya know, on the fly. Luckily they turned out very yummy and without added sugars or oils to boot, woot woot! Oh ya, I’m that dorky.
These babies come together quickly and can be ready to eat after a quick 15-30 minute freeze. This recipe was made on the fly and the following measurements are approximate. Please adjust ingredients based on your personal taste.

- I prefer to use a silicone baking sheet because the turtles peel off so nicely, plus I don’t waste parchment paper.
- Kirkland chocolate chips are vegan. I buy a huge bag to save money but they are tempting to have in your house so be careful if you guy this kind.
- If you prefer alcohol free vanilla extract like I do, Simply Organic Vanilla Flavoring adds so much more flavor and depth.
- I usually buy pitted dates from Winco in bulk because they are inexpensive BUT they are a bit dried out and require soaking. If you buy prepackaged pitted dates they are usually very soft and blend well.
