This time of year we go corn crazy. Corn on the cob, corn bread, corn soup, corn fritters and on and on and on. Corn is a wonderful food that although can spike your glucose levels more than kale does it still is good for you and damn good too!
Corn is high in fiber and low in fat but did you know that one ear of corn has 3 grams of protein in it? It also has potassium, vitamin C, folic acid and many other nutrients. The natives knew what they were doing by using this wonderful food and this time of year it is plentiful and tastes better than any other time of the year so eat up!
The photos I have here show the fritters fried in some coconut oil but if you want to keep them as low fat as possible you will need to thin the batter down and use a cooking spray. I make them that way as well but since we do not eat anything fried at the fair or at restaurants we occasionally make these fried. I know I know, I should never ever eat fried foods but I admit that I do once or twice a year so sue me!
I of course use fresh corn from the cob because it is so crisp, sweet and amazing this time of year but if you happen to read this post during the dead of winter and you do not have any choice you can use frozen (canned corn=gross!), organic sweet corn is the best choice to use.
I recommend sifted flour for this recipe so they are very light and fluffy but if you don’t have one they still work out pretty darn deliciously without sifting!
There is nothing super unique about this recipe, it is just my own spin of a corn fritter with the ingredients that I like best. If you do not like almond milk use the type on nondairy milk that you like, you can use either white or wheat flour here and you could even add a different sweetener if you want to, make it your own. There are tons of fritter recipes on the internet and all are pretty close to the same thing you just need to adjust it to your liking.
Sweet Corn Fritters
Makes; 10-14 fritters
1 cup sifted flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened almond milk (adjust amount to desired fluffiness)
1 1/2 – 2 cups fresh corn from the cob (or frozen-thawed)
3 Tablespoons sugar + extra for sprinkling (or sweetener of your choice)
Sift the dry ingredients together and then add the rest of the ingredients expect the extra sugar for sprinkling and mix well.
Drop approximately a 1/4 cup of the batter into your hot oil, or sprayed pan and cook until it is a golden brown. Flip and continue cooking until cooked through.
Remove and lay on a paper towel to remove excess oil then sprinkle with sugar immedietly. Move the fritters right after sprinkling with the sugar to a cooking rack so they stay fluffy and dry. Continue cooking until the batter is gone and then ENJOY the amazing delish fritters.
