Oh Sweet Cashew Cream how I love thee!! Enjoy this Sweet Cashew Cream as a topping on or filling in any sweet treat you are craving. Cashews are the creamiest nut but are lower in fat than most other nuts, so savor this whole food as a guilt free treat.
Sweet cashew cream is a much healthier alternative to traditional whipped cream and is full of vitamins and minerals instead of sugar and oils.
Making sweet cashew cream is a breeze and the left overs can be stored for about 3-4 days in the fridge for future snacking or dipping. I love to make extra and dip strawberries into it as an after dinner snack while watching a movie.
A Vita-Mix blender is not required if you soak your nuts overnight or boil them for 10 minutes before blending. Keep in mind that cooking them reduces their nutrient density.
Soaking the cashews (or any nut for that matter) helps to not only soften them but helps your body absorb more of the vitamins and minerals.
As you cab see in all the pictures displayed the color and texture can vary greatly depending on how long you blend and what/how much sweetener you use. Dates, vanilla and maple syrup are dark brown result in a darker cashew cream. If you are desiring a white color use lemon and agave nectar.

Use sweet cashew cream as a great substitute for whipped cream or vanilla pudding. I have substituted thinned sweet cashew cream for yogurt in my Rawnola Parfait recipe for a nutrient dense food. The possibilities are endless and all worth trying 😉

- As I mention above you do not need a Vita-Mix for this recipe but let me say they makes it creamier than any traditional blender on the market.
- Be sure to use pure maple syrup and not the junk with high fructose corn syrup in it. Just YUCK!
- If you prefer alcohol free vanilla extract like I do, Simply Organic Vanilla Flavoring adds so much more flavor and depth.

- 1 Cup raw cashews soaked at least an hour & rinsed well
- 1 1/2 - 2 Cups water adjust to thickness you desire-adjust as you go
- 2-4 Tablespoons maple syrup or a handful of dates - both adjusted to taste
- 1 Teaspoon vanilla extract optional
- 1 Dash salt optional

- Drain and rinse cashews well. Add cashews to your blender along with 1 cup of water, sweetener, vanilla extract and salt.
- Blend on high until smooth and creamy adjusting the water and sweetener to taste desired consistency.
- Pour into a serving bowl and ENJOY!

Um, looks amazing! All of them. I have been vegan for about a year now and have heard of cashew or nut creams, spread, cheezes etc but have not made any. These cakes will motivate me. Thanks for your sweet comment. I was like you in that I had seen cashew cheese and spreads many times but was just intimidated by them but finally tried it when I was trying raw things and OMG I am so sad I did not do it sooner! I have now made a ton of cashew creams, dressings, and many other foods. The cashew sour cream is A-MAZE-ING!!! I am loving all the raw things I am making to and anything I can to help up the health of the dish is good to balance out all the sugar treats I make 😉
