These substantial sandwices will fill up even the biggest eater if you use the right size bread.  The sourdough bread is toasted to give you that deli experience in your own kitchen.  The vinegar soaked cucumbers and onions give it just a little zip.  Enjoy them alone or with a side such as the Pretty Pasta Salad or a Fruity Smoothie.

Super Sour Dough Sandwich

Super Sourdough Sandwich
Serves: 4

8 pieces of large Sourdough bread
1 avocado sliced
2 tomatoes sliced
1 carrot shredded
1 cucumber sliced
1/2 red onion sliced
Spinach leaves
Vinegar
Vegenaise
Mustard
Salt & Pepper

Peel the carrot and the cucumber.  Shred the carrot and slice the cucumber.  Place the cucumber on  a plate and fill with just enough vinegar to barely cover them.  Slice 1/2 the onion and mix them in with the cucumber and set aside.

Slice the tomato and avocado and place on a plate with the shredded carrots and spinach.  Toast the sourdough bread in the toaster or broiler just until it is lightly brown and crisp.

Spread the vegenaise and mustard on your bread and top with all the veggies making sure to get the cucumber and onions that have been soaking in the vinegar.  Sprinkle with salt and pepper if desired (salt brings out the flavor a little better but a little goes a long way).  Cut in half and ENJOY!
