It’s good morning outside! That is how my now 24 year old son used to wake me up when he was 3. He would come running into the bedroom screaming, “It’s good morning outside mom, wake up!” It always woke me up with a smile for the day. This Super Simple Sunshine Smoothie can put a smile on your face and give you the energy you need to start the day off right.
I love throwing different things into my Vita-mix and seeing what yummy creation I can come up with and this one turned out like a glass of delicious sunshine. Trust me, I have made some horrible smoothies in my time especially when mixing in greens. I enjoy making a super nutrient dense smoothie but sometimes I can over do it by adding too many “good” things and end up making it too complicated and well…gross. This one is super simple and tastes like you went to one of those expensive juice/smoothie bars. Throw in a few ice cubes if you want it super cold.

- For this recipe I use Unsweetened Almond-Coconut milk by Almond Breeze, my favorite brand of non-dairy milk. The combination of flavors really gives it a tropical taste.
- I usually buy pitted dates from Winco in bulk because they are inexpensive, BUT they are a bit dried out and require soaking. If you buy prepackaged pitted dates they are usually very soft and blend well.
- The Vita-Mix makes easy work of blending dates and fruits down to a perfectly smooth smoothie. Regular blenders just do not have the same power.
