Mexican Rice is a simple dish to make and you don’t even have to use any oil, making this uber healthy!

  1. Prepare rice according to the package directions.  
  2. While the rice cooks chop veggies and steam in a little water until tender. Add additional water as needed until the veggies are cooked through.
  3. Add the spices and stir well to blend and cook for and additional 3 minutes.  
  4. Add the rice and stir fry until heated through.  Taste and adjust the spices to your liking, add additional heat with green chilis or jalapeños if desired and ENJOY!
