These mashed potatoes are just as good as any made with milk and butter and even my meat eating son and husband can attest to that. Plus these do not have any cholesterol and are much lower fat that traditional ones but taste just as good as they do. You can add some vegan butter to them to give them a little bit more flavor but you don’t really need to. If you want a meal with these then you can use them on the Produce Potato Pie.

Garlic Mashed Potatoes
8-10 Yukon Gold Potatoes (or potato of your choice)
1/2 onion chopped
3/4 – 1 1/2 cups of unsweetened almond milk
1-2 teaspoons garlic powder to desired taste
sea salt to taste
Peel the potatoes and cut into quarters. Boil with the chopped union until potatoes easily break when poked with a fork, usually 20 to 30 minutes.
Drain the potatoes and add the milk, garlic powder and salt. Beat immediately until smooth, preferably with an electric beater on low setting. Add more garlic powder and salt to taste and add vegan butter if desired. ENJOY!
