This is such a great summer side dish to have along side many dishes or even as a quick snack. It is also great added as a topping to a sandwich like a Super Sourdough Sandwich. Vinegar is a slimming food and of course added to two other vegetables and you have a waist trimming dish. to make this a completely RAW dish use raw apple cider vinegar.
Cucumber and Red Onion Salad
1 cucumber peeled and sliced
1/2 red onion sliced
1/2 cup white or rice wine vinegar
1 teaspoon sweetener
Salt & Pepper
Peel and slice the cucumber and place in a bowl. Slice 1/2 the red onion and add to the bowl. Mix with the vinegar, sweetener and salt & pepper. ENJOY!
