Today is the BIG day!  My husband is trying the 21 day Vegan Kickstart.  I know it is a late start but this way we get to look through more recipes on the 21 day Vegan Kickstart website and add those to the ones that I already make.

My husband works really long hours, he is up at 4:00 am every morning to be at work by 5:00 and does not get home until 6:30 or later each day.  The challenge for me with him is that in addition to being at work so long he is also always on the go so fast food can be tempting and convenient for him.  I am going to have to pack easy, quick meals that are portable.  He does not always stay in the office so a microwave is not always available.  With all of that in mind I have packed him an arsenal of back up foods for each situation.

He has Peanut butter, jelly and bread at work that he can slap together and take with him if he is on the road.  He also has lots of fresh fruit that is already cleaned and ready in his work fridge to bring on the road.  I packed up some individual baggies of fresh, raw nuts that he can eat on the go as well.  He has microwavable vegan soups by Amy’s, or vegan chili that he can warm up at work if he is in the office.  I will try and make meals with left overs so he can always warm those up as well.

I told him it is important that he EAT, don’t ever go hungry.  This is not a diet it is a lifestyle so you just eat when your hungry until you are full.  The hope is through eating healthy foods with higher nutrients in them he will become thinner and healthier and not feel as hungry because of it.  This first week will be difficult because he will for sure go through some of the detox symptoms of not having those foods so he might get headaches, become cranky and will actually crave those foods more.  Once they are out of his system in 3-7 days he will start to notice a great difference.  He will feel better, look better and feel lighter.  He will have increased energy and hopefully will start to enjoy healthful foods more and more.

Summary of his day:

He ate instant oatmeal for breakfast as well as vegan creamer in his 1 cup of coffee at work.  He had an apple before lunch then a peanut butter and jelly sandwich for lunch.  He had another snack of a cereal bar while at work.  When he came home we ate Mess on Your Face Burgers and Fat Free and Fabulous French Fries.  He said he felt satisfied after dinner but a little lacking in the day.  He did have a small headache but it could be that he did not drink any soda today (usually has 1 a day) or not eating the regular food.

In general it was a good, uneventful first day.  No left overs from tonight’s meal to send with him so that might prove difficult (boring) again.  I took his measurements and weighed him so we can track his progress.
