Ingredients

  • 1 12 ounce box of pasta of your choice
  • Veggies of your choice
  • 3 chopped green onions
  • Fat Free Italian Dressing
  • Vegenaise (optional)
  • Spices of your choice (I used garlic and onion powder, dried basil, salt and pepper)

  • Cuisine: Cooking time: 15-30 mins Serving: 4-6 people

    This is a quick and easy pasta salad to throw together for lunch or as a side to dinner.  I never make it exactly the same every time because I just use what veggies I have on hand.  I do love to always have steamed broccoli and carrots as well as fresh cut cucumbers in it but other than that I just mix it up.

    It is a great dish to feed the kids or a picky eater because it is so pretty and if food looks good to that group they usually will eat it (or at least try it).  They will eat it up not realized they got in so many nutritious vegetables for the day.  I cut my veggies up really small so you don’t get an overdose of one kind or another and usually get several in one bite to mix the flavors.  You can use any kind of noodle you want to but I really like the curly ones because they hold the veggies in the creases really well.

    I really don’t measure anything on this I just put in what tastes good a little at a time and taste as I go until it is right.   Have fun making it and ENJOY!

    Pretty pasta salad

    Pretty Pasta Salad
    Serves: 4-6

    1 12 ounce box of pasta of your choice
    Veggies of your choice ( I used 2 chopped carrots, 2 chopped celery, 1 chopped cucumber, 3 chopped green onions, 1 chopped red bell pepper ,  and 1/2 cup chopped broccoli)
    Fat Free Italian Dressing
    Vegenaise (optional)
    Spices of your choice (I used garlic and onion powder, dried basil, salt and pepper)

    Boil the pasta, while that is cooking chop the veggies that need to be cooked.  Steam the veggies in a small amount of water until cooked through.  Drain and run over with cold water to stop the cooking.

    Chop the fresh veggies into bite size or smaller pieces.  Throw all veggies (cooked and fresh) into a large mixing bowl.

    When pasta is done run cold water over it to stop the cooking and to cool the noodles.  Toss in the bowl with the veggies.

    Add the vegenaise, Italian dressing, and spices to your desired tastes and mix well.  Start with the smallest amount of each and work up from there while tasting.  A good amount for the vegenaise to start with is 1-2 tablespoons.  The Italian dressing gives it the best flavor and the vegenaise gives it the creaminess needed.  Toss and ENJOY!
