Ingredients

  • 1 leftover Oatmeal Waffle
  • Your choice of healthy peanut butter
  • Your choice of healthy jelly spread
  • Cuisine: Cooking time: 10 mins Serving: 2 people

    Who does not love a good ole peanut butter and jelly sandwich?  Well after falling in love with this Oatmeal Waffles recipe I started to make extra  and store the left overs to make these simple yet sinful PB & J Waffle Sandwiches.  The extra waffles can be stored on the counter over night or in the fridge for up to 2 days.

    After cooking the Oatmeal Waffles let them cool on a raised wire cookie sheet to allow to completely cool and dry out a little bit.  The waffles get soft after being stored in a Tupperware on the counter or can stay slightly crisp if left out from breakfast.  I like to toast mine before spreading on the PB & J but my kids like theirs soft.

    The waffle pockets hold a good amount of PB & J and are  slightly chewy which makes these delicious sandwiches a texture treat.   You gotta try some of these babies soon because they are such a great change from regular bread, but be careful they are addicting and messy too!

    PB & J Waffle

    PB & J Waffle Sandwiches

    Serves 2

    1 leftover Oatmeal Waffle
    Your choice of healthy peanut butter (you can use almond butter or other nut butter spread too)
    Your choice of healthy jelly spread

    Tear the waffle into 4 squares.  Spread the peanut butter on one side making sure to fill the squares up.  Spread the jelly on the other side again making sure to fill the squares up so you get a hearty sandwich.  Slap those babies together and ENJOY!
