    NOT Tuna Salad Sandwich tips:

I have tried several different types of beans with these sandwiches but our family loves garbanzo beans the most (chickpeas) because of the tuna taste and texture.

Kelp or dulse helps to give them a bit more fishy flavor but it you don’t have either of them you can omit it and they still taste awesome.

I enjoy my NOT Tuna Salad Sandwich on sourdough bread that has been lightly toasted.  If toasted bread rips up your mouth just turn the toasted part inside the sandwich.  You still get the amazing crunch but with the soft gentle part on the outside.

    NOT Tuna Salad Sandwich

    Serves 4

1 can garbanzo beans (chickpeas) drained and rinsed
1-2 stalks of celery  thinly sliced
    2 Tablespoons chopped onions
1-2 Tablespoons dill relish (or chopped dill pickles)
Veganaise to taste and consistency (see my Substitution page for other mayo substitutes)
    Mustard to taste
1/8 – 1/4 teaspoon Kelp or Dulse flakes (can omit)
    Dash or two garlic powder
    Salt and pepper
    Bread

Place the drained beans in a food processor and pulse until broken up but not smooth.  You can smash the beans up with a fork if you have a strong arm :-).  Pour into a medium sized bowl.

Mix in the celery, onions, and relish.  Add a Tablespoon of Veganaise, a squirt or two of mustard and the spices. Mix well and taste.  Adjust the ingredients to your tastes.

Spread desired amount of NOT Tuna Salad onto a slice of bread and top with the other piece of bread or add lettuce and tomato for an extra hearty sandwich.

I sometimes serve this sandwich with Crispy Baked Fries.   Enjoy!
