  • 2 whole wheat tortillas
  • 1 shredded carrot
  • 1 handful fresh spinach
  • 1 handful Daiya cheese (flavor of your choice)

    So I enjoy fattening food just like everyone else and although I do try and keep it to a minimum I get cravings and don’t always deprive myself during that craving.  Since I am doing Vegan MoFo 2010 and am going to post 5 days a week I thought I would do Fattening Friday’s to show some of the extra naughty treats we eat.

    I was at the store the other day and a bag of Daiya Cheese called my name so I brought it home.  I put the cheese away in the fridge until a craving hit today since I’m feeling a little lazy and these are a quick meal that can be made in minutes.  I do try and add veggies to as many things as I can and this is a great way to sneak them in.  My kids can be as picky as everyone else’s kids when it comes to veggies but when I shred or chop the veggies super small so they are not overbearing the kids do not notice them at all.

    I normally put chopped green onions in these too but today I did not have any but you get the idea so experiment with the veggies or even beans you and your family like.  I like mine dipped in salsa but the kids just eat them plain.

    Cheez & Veggie Quesadilla

    Cheez & Veggie Quesadilla

    Serves: 1-2

    2 whole wheat tortillas
    1 shredded carrot
    1 handful fresh spinach
    1 handful Daiya cheese (flavor of your choice)

    Shred the carrot and set aside.  Roll the handful of spinach tightly in your hand, cut down the middle then cut very thin slices the other direction making very small easily cookable pieces and set aside.

    Spray a pay with a small amount of cooking spray, place one tortilla into the pan.  Spread a half of a handful of cheese on the bottom, top with carrot and spinach then spread the remaining cheese evenly on top.  Top with the other tortilla and cook on medium heat until golden brown.  Spray the uncooked side of the tortilla with a little cooking spray and flip over, press down in the pan and cook until golden brown.  Remove and slice with a pizza cutter and serve with salsa or desired topping or dip.  ENJOY!
