I threw these low fat mashed potato pancakes together on the fly. If you have left over mashed potatoes or like I did, you over cook your potatoes these come together quickly. And, as an awesome bonus they taste A-Amazing!

The day before I made these I had over cooked some mini potatoes in my Instant Pot. I just could not throw them away. I thought, hmm potato pancakes might be a good way to use them up!? I made a quick one to see if it was worth my time to make a bunch. OH Boy, everyone liked them. Yahoo for mama!
Please note, it is best that your left over mashed potatoes are cold so they are a bit dried out.
As you can see in the following video this recipe is on the fly and there are not exact measurements. Please adjust the spices to your taste.

- If you do not have leftover mashed potatoes you can make quick baked potatoes and mash them with a Potato Express. They only take about 8-9 minutes to cook 5-6 potatoes.
- Nutritional yeast is the key to this recipe. If you have a Winco near by they have a great price on bulk nutritional yeast. Otherwise, online offers a good deal for large orders.
