Vegan Mashed Potato Pancakes

The day before I made these I had over cooked some mini potatoes in my Instant Pot.  I just could not throw them away.  I thought, hmm potato pancakes might be a good way to use them up!?  I made a quick one to see if it was worth my time to make a bunch.  OH Boy, everyone liked them.  Yahoo for mama!

Please note, it is best that your left over mashed potatoes are cold so they are a bit dried out.

As you can see in the following video this recipe is on the fly and there are not exact measurements.  Please adjust the spices to your taste.

    • If you do not have leftover mashed potatoes you can make quick baked potatoes and mash them with a Potato Express.   They only take about 8-9 minutes to cook 5-6 potatoes.
    • Nutritional yeast is the key to this recipe.  If you have a Winco near by they have a great price on bulk nutritional yeast.  Otherwise, online offers a good deal for large orders.

Instructions
  1. Chop the onions and cook them in a small amount of water (no oil) until the pan dries out and the onions start to brown.
  2. Add a small amount of water, the minced garlic and continue cooking. Continue adding water until they are fully cooked.
  3. Add nutritional yeast, salt and pepper to taste. Mix the desired amount of mashed potatoes into the onion mixture. Taste the mixture and then adjust the spices to your liking.
  4. Wet your hands lightly then make 4 patties and cook in a non stick pan or lightly coat a regular pan with cooking spray. Cook until the potato pancake is browned. Flip and continue cooking until it reaches your desired crispness.
  5. Serve immediately with your preferred toppings. ENJOY!
Recipe Notes

If you do not have leftover mashed potatoes you can make quick baked potatoes and mash them with a Potato Express.   They only take about 8-9 minutes to cook 5-6 potatoes.

These would make a great side to Strawberry Short-Biscuts with Cashew Cream or Carrot Cake Muffins with Cashew Cream Topping.
