My husband loved cream of wheat cereal as a kid and has fond memories of his grandma making it for him.  She used whole milk and butter mixed well to make it extra smooth and creamy.  She then topped it with Mrs. Buttersworth syrup and fresh blueberries from the hills of Alaska where they lived.  Ahhhhhh (sounds of angels singing), I know, sounds like Leave it to Beaver, and it was, seriously!

I on the other hand do not have fond memories of cream of wheat and always hated it.  When my mom prepared it for us it was thick, chunky, and gummy.  It tasted like what I imagine the slop in the Matrix real world tasted, bland and wheaty.  It was so freakin gross it made me gag and I cried when she made me eat it.

When my husband asked me to make some one morning I was none too thrilled.  But, maybe I could veganize it and make it like his grandma did.  Obviously preparation had a lot to do with the differences my husband and I experienced when eating our cream of wheat.

Does it Taste Better?

I decided to give cream of wheat another try for him and see if I could learn to love it too.  I used almond milk, vegan butter, pure maple syrup and fresh berries.  He loved it and said that although it did not taste the same as his grandma’s that was made from dairy did, it was still yummy.

For me I can say that although it tasted better than the Matrix slop of my past, it was still GGGross.  Sure, it had yummy stuff in it now but it was way too familiar for my liking, gag.  So, I decided to try cream of rice instead.  Maybe it would be good since rice is not as bold tasting as wheat is.

I had eaten cream a rice a few times during a detox diet but it was prepared with water and was very boring.  I always tolerated it as a filling breakfast when on a cleanse or trying to test food intolerances.  It is very low on the reactive scale and with a little pure maple syrup it was tolerable.  Then I found a way to make it taste amazing.  I figured boring was better than gross. I could work with boring.

How to Make Cream of Rice Taste Good

After a few experiments I found the perfect flavor combination for a delightful bowl of creamy goodness, Ahhhhhh (sounds of angels singing).  Not Leave it to Beaver Ahhhhhh, but Vegan Ahhhhhh.  Plus this recipe is gluten free!  I like having gluten free goodies in my recipe pocket.

I discovered that the key to delicious cream of rice cereal is to use Almond Breeze’s, Unsweetened Vanilla Coconut Almond flavor.  I had bought a container to try out but was not a fan of it in cereal or soups and drinking it was meh.  I did not want to waste it and had a box of cream of rice in the pantry from a previous cleanse.  I remembered my husbands fondness of cream of wheat and figured I would try this milk in it.

SCORE!  I had some fresh strawberries on hand and threw them on the top.  With some maple syrup mixed in and poured on top of the strawberries we were both in flavor heaven.  We later tried it with fresh blueberries and it is good but strawberries are amazing.

Let me be honest here though, my kids still have texture issues we are working through and for now they are not a fan because of the texture.

Instructions
  1. Stir cream of rice, maple syrup and milk together in a medium sized pan. At medium heat bring milk to a
  2. On medium heat, stirring constantly, bring milk, syrup and cream of rice to a low rolling boil. Stir for 30 seconds being sure to break apart any lumps that start to form. At 30 seconds turn the heat off, cover and remove from heat. Let stand for 1 minute.
  3. After 1 minute stir and add additional milk to desired thickness.
  4. Top with strawberries and additional maple syrup to taste. ENJOY!
Recipe Notes

This recipe requires more liquid than the  instructions on the package of cream of rice calls for so adjust to your desired consistency.  Keep in mind that this cereal thickens as it cools.  I do not add salt and never add vegan butter, they are not needed.
