Black Bean Veggie Burgers

These are a mixture of veggie burgers and black bean burgers.  I like to sneak veggies in everywhere I can  and with kids you need to try extra hard to be sneaky.  I just love these and they taste better than any store bought burger you can buy.  Plus my whole  family really likes the flavor and having the whole family like something is a great thing.  The great thing about making your own burger is you can make a baseline mixture then as you  pull out a handful to roll a burger you can add more spice where desired.

These burgers are very hearty and filling and could be enjoyed with some Fat Free and Fabulous French Fries.  They are gluten and sou free without the bun.

Black Bean Veggie Burgers
serves 6

1 can of black beans, drained and rinsed
3 green onions, chopped
1/2 carrot, shredded
1/2 green pepper, chopped finely
1 stalk of celery, chopped finely
1/2 teaspoon cumin (more if desired-I like more but the kids don’t)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon sea salt
a couple of sprinkles of Cayenne pepper (this is the kid friendly amount add more if you want)
1/4-1/2 cup of chopped whole oats (as a binder-plus adds even more good fiber)

Cook your vegetables in a little water until softened.

Mash beans and add the cooked vegetables, spices and chopped oats.  Add the least amount of oats and work your way up until you have a burger that holds together.  Too much will make them crumbly and dry so be careful.

Roll into 6 even balls (adding more spices to each one if desired), spray a large skillet with non fat spray.  Flatten balls in your hand until they are a little less than a 1/2 inch thick  and cook on medium heat.  When you flip the burger to the second side press down slightly with your spatula to ensure even cooking.

Put on a bun with your desired condiments and topping and ENJOY!

Breakfast:

1 cup of Coffee with soy creamer, Cereal with Rice milk

Snack: Mid morning

Amy’s Lentil Soup, Left over Pretty Pasta, 1/4 Fruity Smoothie

Dinner:

Mess on Your Face Burgers and Fat Free and Fabulous French Fries

Daily Reflections:

I noticed being pretty hungry in the early day but I’m not sure if was my cereal choice or the fact that I had to share it with my 2 toddlers (I always have to share all all my food with them if they see it).  I was very busy so I did not eat as much as I wanted to.

I shared my soup with the kids but we ate 2 cans between the 3 of us so probably an ok serving and it is a really filling and tasty soup.  I love lentil soup and theirs is pretty good for a quick choice.

I ended up eating my burger and fries and then some of the kids left over burger because I was so hungry from what felt like a lacking day.  I don’t feel too bad about it though because my calorie intake was low over all and the burgers are pretty low in fat and calories as well.  Especially with using the thin buns that I buy.  I really love those because I always feel like there is just to much bread on other buns and the thin one fits them perfectly.  I don’t feel like having my night time snack because I am stuffed and exhausted from a long day or returning 3 of my 4 kids back to their schools and running them around.

No Secret Fry Sauce

I came from Utah and in Utah we had something called fry sauce.  It is divine and you had to have it on your burger as well as to dip your fry’s into. Yes people still dipped their fries in their shakes too but it is not as good as dipping it in fry sauce.

It is a wonderful dip that really was just mayo and catchup mixed together with each restaurant adding a special blend of spices to make it their own “secret” fry sauce.  After a while you had your favorite fry sauce from certain places.  I decided once I moved to Arizona that instead of having it shipped to me I would make my own.  Then when I went vegan I made some  adjustments and now I have my own “NO secret”  fry sauce.

No Secret Fry Sauce

Serves 4

4 Tablespoons Vegenaise

1 Tablespoon Ketchup

2 teaspoon dill pickle relish

1/2 teaspoon minced garlic

1 teaspoon red wine vinegar

1/2 teaspoon onion salt

salt and pepper if desired
