Quick Spaghetti

This spaghetti is really quick and shows that you can still eat healthy without having to make everything by scratch.  There are many brands of spaghetti sauce that are vegan and you can find some that are fat free.  I have a little trouble finding the fat free ones that my family will eat so I go with the lowest fat I can that they will eat.  I switch brands often by sales or what I am feeling like or what store I am at.  I am not loyal to any one brand!

Make it even more healthy by sauteing some onions to add to the sauce and to use as a topping  with if you need a topper instead of cheese.  I also added some very tiny pieces of chopped carrots to the sauce that my family does not notice.

Another topping choice is adding sesame seeds for added calcium or try nutritional yeast for a slightly ‘cheesey’ flavor and added vitamin B-12.  Choose rice, quiona or other gluten free noodles to make a gluten free spaghetti.

Quick Spaghetti

1 box of pasta of your choice
1 jar of store bought vegan spaghetti
1-2 onions
1 carrot or 1/4 cup frozen carrots chopped

Cook pasta per package instructions.  While pasta is cooking chop onions and carrot and cook in pan with non fat spray until tender crisp.  Toss most or all veggies into a pan with the jar of sauce and cook on medium low with a lid (you need a lid or the sauce will bubble all over your stove).  When the pasta is al dente drain in a strainer and rinse with water.  Pour desired amount onto a dish and top with cooked pasta sauce and extra veggies if you set them aside or other above mentioned toppings.  A great side to this is Roasted Cauliflower or a tossed salad.  ENJOY!
