Rice & Veggie Wrap

For these I use what ever veggies I have around the house with the rice and then throw into a corn tortilla with some salsa, yum.  They are very nutrient dense and filling and there is no additional fat so eat as much as you want!  ENJOY!

Rice & Veggie Wrap
serves 4-6

Brown Rice ( 3 servings)
Beans of your choice
Veggies of your choice, chopped or sliced
Minced Garlic
Spices of your choice (I used 1/2 tea onion salt, 1/2 tea Italian seasoning and salt and pepper)
Salsa
Corn Tortillas

Cook the brown rice per the package.  Chop and slice your veggies and steam long enough to get tender crisp then add the rice and seasonings.  Cook for an additional 5 minutes.  Spread on a corn tortilla with salsa and put warm rice and veggies inside and ENJOY!
