These are such a pretty treat that you can showcase them at any gathering and spark interest in your culinary skills, even if you don’t have any because they are super easy!
It is always best to use fruit that is in season but if it is the dead of winter you might have to use some frozen fruit, just get creative.
Many frushi recipes out there call for a small portion or half of the can to be used but if you have ever opened a can of coconut milk you know there is a big chunk inside the liquid that is a bit difficult to mix up. I have used the full fat and the lite and it is definitely better to use the lite. The full fat tastes amazing but does get a bit greasy and of course you don’t want all that fat anyway right!
You can roll these like you would regular sushi rice and then cut them or just scoop out with your hands and mold into the shape you like, like pictured. Either way it is a little bit of work but wow they are beautiful and my daughter loves them so much she will fight you for the last one! My little ones enjoy these because they are pretty and they love to eat all the decoration on the plate so lots of fruit down the hatch!
Serves: about 20 pieces
1 cup Sushi rice
1 can lite coconut milk
3/4 cup water
2-4 Tablespoons sweetener
dash of salt (optional)
Fruit preserves of choice
fresh/frozen fruit of choice
Mix the rice, coconut milk, water, sweetener and salt together in a pan, stir well to blend ingredients and bring to a boil. Stir well to make sure it does not stick to the bottom of the pan. Cover the pan with a lid, reduce the heat to the lowest setting and simmer for 20 minutes (do not remove the lid). After the 20 minutes remove the pan from the burner and let stand, covered for 10 minutes. After the 10 minutes remove the lid and cool until you can touch it with your hands.
While the rice is cooling prepare your fruit slices and set up the desired preserves for preparation.
Prepare the rice into the desire shapes by either rolling in your hands and pressing into a shape (as pictured) or roll in saran wrap and squeeze with the sushi mat then slice. If you used lite coconut milk you may need to spray your hands with a little cooking spray so the rice won’t stick. Arrange rice shapes on a plate and top with fruit preserves, fruit or both together. You can make them a little prettier and sweeter by sprinkling the plate with a little pure maple syrup but it is not needed. These can be eaten right away or chilled until ready to serve. ENJOY!
