NOT Tuna Salad Sandwich

These sandwiches are very much like tuna salad sandwiches so I call them Not Tuna salad sandwiches.  As we all know beans are so good for you and they are very full of fiber so they keep you full for a long time.  There are many recipes out there for these types of sandwiches and you can use many different spices, vegetables and beans.  I have tried them with garbanzo (chick peas) and they are great and a little more textured that way maybe more like tuna.  With the canellini beans they are more creamy and smooth so you decide which is best for you and substitute it for what I have.  You can also add lettuce, tomatoes, or avocado slices to this but I like it plain.  Use your imagination you could even do black beans and add cumin, chili powder and green chilies and have a Mexican inspired sandwich.  It is always good to try and rotate your food as much as you can so you always get different nutrients.

NOT Tuna Salad Sandwich

Serves 4

1 can cannellini beans drained and rinsed
vegenaise (vegan mayo bought at health food stores)
1-2 stalks of celery  sliced (leave the leaves on they are good for you and don’t taste bad either)
1-2 green onions sliced
dill relish
whole wheat bread
salt and pepper

Smash the beans up with a fork until smooth.  Mix in about 1-2 tablespoons of vegenaise to desired consistency, veggies and a squirt or two of dill relish.  Add a small amount of salt (remember the beans were soaking in a salt solution and you don’t want too much salt) and pepper.  Mix and spread onto a slice of whole wheat bread and top with the other piece of bread.   I served this with some of the Fat Free and Fabulous French Fries I make as well as the Fruity Smoothie I make.   Enjoy!
